Heehee... had this at trotter's on friday night and decided to try it out at home
Serves 4-5:
- approx 4 tbs olive oil
- 6 garlic cloves, chopped finely
- 1 tsp chilli flakes
- 2 tsp oregano
- 20 cherry tomatoes, halved
- 20 olives, halved
- 3 chorizo sausages ( sliced into semicircles)
Heat oil and fry garlic, chilli flakes and oregano till fragant. Then fry the chorizo until cooked, and add in the cherry tomatoes and olives. Fry for another 2-3 minutes.
Toss in the pasta. Serve in bowls, and top each bowl with a handful of rocket, and some parmasen :) yum.
